Sophie S. Applegate, 56, of Neptune, died Monday at Jersey Shore University Medical Center in Neptune.
She was born in Lakewood and lived in Jackson and Long Branch before moving to Neptune 14 years ago.
Sophie was a waitress at Blue Swan Diner in Ocean for the past 14 years and prior to that at Casey Jones in Long Branch. She loved working at the diner.
She was predeceased by her parents, Bernard Potkay and Antoinette and her husband Frank Carson.
Surviving are a daughter, Dale House and Ralph Torres; 2 brothers, Bernard and Richard Potkay and 5 grandchildren, Ava, Bella, John, Xavier and Monique and her dog, Trixie.

Relatives and friends are invited to visit from 6-8 pm Sunday and 9-11 am Monday at the Fiore Funeral Home, 236 Monmouth Road, Oakhurst, Ocean Township. In lieu of flowers, donations in her memory may be made to the American Cancer Society or to the SPCA, 260 Wall Street, Eatontown, NJ 07724.
